Hello Dreamers:
We have touched on some serious issues recently, so this week we will keep it a bit light.
I wanted to do this post in time for you to pick up the supplies if you choose to make
some of these recipes for St. Patrick’s Day. My favorite seitan reuben sandwich is from
Sluggo’s North in Chattanooga, Tennessee. But if you don’t find yourself near Chattanooga
this week, here are some recipes that are just as amazing:

Avocado Reuben
2 slices Pumpernickel Rye Swirl bread
2-3 tbsp. of saurkraut (I use canned, drained)
Avocado slices - (use as much as you want, I use half of one avocado, depending on the size).
mustard
Thousand Island Dressing (vegan)
1. Lightlty oil skillet
2. Spread one slice of bread with mustard and the other slice with Thousand Island Dressing.
3. Place the bread slices dry side down in skillet.
4. Top one slice with avocado and the other with saurkraut.
5. Put the halves together and grill until lightly toasted (5 min.)

Make sure to wear your green on Friday, March 17th. St. Patrick used a three leaved plant (shamrock) to explain the Trinity to the pagan Irish. The symbol below has been around for at least 5000 years, although scholars and historians don’t know exactly how old it is.
It was repopularized by the tv series Charmed.

The Triquetra, also known as the trinity knot covers many different religious beliefs. This symbol is constructed of one continuous line interweaving around itself, simulating no beginning or end. The Celts believe that everything good
comes in threes.

The circle in the knot indicates the uniting of the three elements. The word Triquetra is latin for “three-cornered”. Christians believe the knot represents the Father, Son, and Holy Spirit. To Neopagans it is a symbol of the goddess and the three stages of womanhood: maiden, mother, crone. By wearing the symbol with the triangle facing downward, one can honor the triple Goddess Brigid. The symbol worn in this fashion is said to bring positive energy, harmony, and creativity into your Hearth and Home.
So you may want to pick up a Triquetra symbol for yourself this St. Patrick’s Day. It’s a beautiful icon because it can mean different things according to your heritage, enabling you to carry on the traditions of your ancestors.
